Spice Bag
Fakeaway
Ireland's most beloved invention that isn't actually Irish — chips, shredded chicken, peppers and chilli tossed together in a bag. Born in Dublin's Chinese takeaways, now on menus everywhere.
Ingredients
- 4 large potatoes, cut into chips
- 2 chicken breasts, cut into strips
- 1 red pepper, sliced
- 1 onion, sliced
- 1 packet spice bag seasoning — McDonnell's
- 2 tbsp oil
- 1 red chilli, sliced (optional)
Method
- Cook the chips as you normally would — oven or fryer — until crisp and golden.
- Toss the chicken strips with half the seasoning and leave for 10 minutes.
- Heat the oil in a wok over high heat and stir-fry the chicken 5–6 minutes until cooked through and catching at the edges.
- Add the pepper, onion and chilli. Stir-fry another 3 minutes — they should stay crunchy.
- Tip in the hot chips and the rest of the seasoning. Toss everything hard for a minute so the coating gets everywhere.
- Serve immediately, ideally in a paper bag, with curry sauce on the side.
Tip: High heat, and keep things moving. A spice bag should be crisp, never soggy.
